Ingredients

  • 3 pounds ground beef
  • 1 onion chopped
  • 4 garlic cloves minced
  • 2 tablespoons tomato paste
  • 2 tablespoons chili powder
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 tablespoon dried oregano
  • 2 14.5 oz cans fire-roasted tomatoes
  • 4 cups chicken stock
  • 1 14.5 oz can pinto beans rinsed
  • 1 14.5 oz can kidney beans rinsed
  • 1 14.5 oz can pure pumpkin

Instructions

  • In a large pot on medium-high heat, cook the ground beef until browned.
  • Turn the heat down to medium and add the onions and garlic. Cook until softened, about 6 minutes.
  • Add the tomato paste and cook for 2 minutes. This can burn easily, so make sure to continue stirring.
  • Add in the chili powder, oregano, onion powder, garlic powder, fire-roasted tomatoes, and chicken stock. Bring to a boil.
  • Add in the rinsed beans and pumpkin.
  • Cover and simmer for at least 30 minutes.
  • Serve, and enjoy!

Notes

**Let the chili stew for a few minutes after adding the fire-roasted tomatoes for an even richer flavor.**
