1headcauliflowercut into florets
½cupmozzarella cheeseshredded
¼cup parmesan cheeseshredded
½teaspoonkosher salt
½teaspoon Italian seasoning
½teaspoongarlic powder

Instructions
Preheat the oven to 400°. Cut the cauliflower head into florets and pulse them in a food processor. Lay a kitchen towel or cheesecloth in a medium-sized bowl and put the cauliflower rice in the bowl. Place this in the microwave for 3 minutes or until soft and sufficiently steamed. Let it cool! After it's cooled, use the towel to wring out as much water as possible from the cauliflower rice. You don't want any excess liquid in your crust. *Note* you can also buy pre-made cauliflower rice in the produce section of the grocery store.
Place the cauliflower rice in a bowl after wringing out the water, with the cheese, seasonings and eggs. Mix it all together until a loose dough is formed.
Pat out the 'dough' to about ¼ inch thickness on the pizza stone or baking sheet. Raise the edges a little so you have something to hold onto while you eat. Flip the crust over after 20 minutes so it can crisp up the bottom. If your crust is too thin, you may not be able to do this. Try it gently before flipping so as not to break it apart.
Add your toppings and put your pizza back in the oven for an additional 10 minutes.
Notes
**Note** This only makes one 8 inch pizza. If you are feeding more people, double the recipe and make a second pizza.
